Mapo Tofu

One of the most famous dishes from Sichuan cuisine, Mapo Tofu, is often referred to as "Grandma's Tofu." However, its literal translation is "Pockmarked Grandma's Tofu" (with "Ma" meaning pockmarked and "Po" meaning grandma). This name pays tribute to its creator, the wife of Chen Senfu, a small restaurant owner. She was affectionately known for her pockmarked face, which became a hallmark of the dish’s history.

There's a compelling reason why this dish ranks among the most beloved Sichuan delicacies. Its silky gravy and incredibly tender tofu combine seamlessly with the signature Sichuan kick, creating a perfectly balanced and flavorful experience.
